How do I specify the CAM history files to use longitude values of -180 to 180. I'm running with the FCnudged dataset with the 192x288 output grid and the lon values are 0 to 360.
Tom, I'm going to move this issue over the CAM forum. In general CESM is configured to be on the 0 to 360 longitude grid, so I'm not sure you can do this. But, I'll let the CAM community answer the question.
If you need to change the way that longitudes are stored in your file after it is created, I would suggest you use nco operators to change the values in the longitude variable inside your file. The User's Guide for nco is at: http://nco.sourceforge.net/nco.pdf
The page labeled 72 in this PDF describes doing the opposite, taking a file that has -180 to 180 and converting to 0 to 360. You should be able to modify the commands appropriately to get the file with the values you want.

Using Panoply 5.0.5 on a Mac I've been able to create a lat/lon plot of TS from a CESM2 run, with the longitude data going from 0E to 360E. I've also been able to change the center longitude to 180E and properly plot the TS field.
